Kerala Egg curry/ Mutta curry


There is a part inside me  wishing for a joint family life, living in a big  house full of people having lots of fun. Might  sound crazy right ? But thats what I feel now especially since my parents are here with me now. Work is divided between everyone which  makes life easier. It has been weeks since I did the laundary, folded my clothes  or  given lil A a shower. Mum does everything for me. Luckily the job I hates the most is not so boring for Mum and vice versa !!

Making lil A speak his mother tongue was one of the biggest challenge for us. Both me and S being less patient  gave up the effort after trying for while but surprisingly few weeks with grandparents did the all trick. I feel so happy and thrilled to see him speak his mother tongue. I really wish he won't switch back to English once they leave to India in few days time. The mere thought of my parents leaving is giving me an insecure feeling, but after all that's life !

Coming back to todays post, its egg curry/ mutta curry my favourite curry to go along with idiyappam. I usually enjoy eggs in all forms, be it boiled, scrambled , poached, omlette , fried or even half boiled. Yes I am  a total  egg fan. If not for the fat in yolks I could have enjoyed eggs everyday :) So do I need to say how much I love this egg curry !


Ingredients

Onion - 3 medium( thinly sliced lenghtwise )
Tomato - 2 small
Ginger (minced )- 1 tbs
Garlic (minced ) - 1 tbs
Green chillies -2 (slit lenghtwise )
Fennel seeds (perum jeerakam ) - 1 tsp
Redchilly powder - 1 tsp
Turmeric powder - 1 tsp
Coriander powder - 2 tsp
Chicken masala - 1 tsp
Salt
Sugar - 1/2 tsp( optional)
Boiled eggs - 3 ( cut into half )
oil
Water - 1/4 cup
Coconut milk - 3/4  cup
Curry leaves - few sprigs


Method

  • In a saucepan add oil .When the oil is hot add fennel seeds and fry for a minute.
  • Add sliced onions and a pinch of salt and saute until onions are light brown in colour and soft (takes about 15- 30 minutes )
  • Add minced  ginger, garlic, green chillies, few curry leaves and fry for a minute.
  • Add redchilly powder, turmeric powder, coriander powder, chicken masala and stir for a minute. 
  • Add chopped tomatoes and stir until tomatoes are cooked and mashed.
  • Add water , check salt and let it cook covered for 5 minutes.
  • Finally add coconut milk, rest of the curry leaves and  boiled egg. When it is about to boil turn off the flame.

Enjoy the egg curry with Idiyappam / chapathy /  wheat dosa /  appam or even bread :)

Cheese and veg omlette

Wishing you all a Happy Holi !!

I miss all the vibrant Holi festival that we had when we used to live in Pune,the whole flat used to come down and paint each other in colours and if somebody decides to stay home and not get messy they were wrong,the gang used to hunt such people ,ring the bell and pour colours on them...it was nothing but pure fun !

Lil A is down with chicken pox ,so I am pampering him with all the food that he likes , and this cheese omlette is one of his favourite,to make it more healthier I add some spinach and carrot aswell.

Ingredients

Egg - 2 nos
Onion- half of a small onion
Spinach - 1 full ( cereal) bowl
Carrot - 1 small
Cheese slice -1
Salt
Pepper

Preparation

1. Roughly chop the spinach and cook them in saucepan until slightly wilted.
2.Grate carrot,chop the onions and cheese.
3.Break 2 eggs in a bowl and beat it slighltly,add wilted spinach,grated carrot,cheese and chopped onions.Season it with salt and pepper.
4. In a nonstick pan add some oil and pour the egg mixture and cook it covered until done.

Kerala Egg roast

Spring is not that far and I am totally enjoying the day lights now, When I open my kitchen windows I can hear the birds chirping and singing which is so soothing and somehow it brings some nostalgic feelings of home !! Last week on our visit to Supermarket we saw a isle dedicated to spring cleaning items and we too picked up few things, so this weekend we did some spring cleaning to welcome spring and summer :)
Like I said last week, todays post is Kerala Egg roast which is one of my favourite side dish with appam,chapathy,Godambu dosha etc

Ingredients
Eggs - 3 no
Onion -3
Tomato - 2
Ginger -1 tbs (minced)
Green chillies - 2
Red chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder -1 tbs
Chicken Masala- 1 tbs
Cumin seeds - 1/4 tsp
Fennel seeds - 1/2 tsp
Curry leaves
Salt
Oil

Preparation
1. Boil eggs. Remove the shell and slice each egg into 2 halves.
2. In a saucepan add some oil and sputter fennel and cumin.
3. Add chopped onions and saute till soft and brown.
4. Add curry leaves, greenchillies, ginger and saute for 1-2 minutes.
5. Add chopped tomatoes and all the spice powders and cook until tomatoes are cooked.
6. Add the sliced eggs and mix carefully .

Toast with spinach and fried egg(Quick and healthy breakfast option for kids)

Last few days has been so eventful and hectic for me and my lil one. My lil one started Nursery in a Primary School and since he got the afternoon session we have been finding it so hard to find a routine. Giving lunch at 11.30 a.m was the biggest challenge for me,we both are getting slowly adjusted to the new routine. He used to take nice 2 hour nap before , so now when he comes from School I have to engage him without switching on TV or anything and make him eat his dinner by 6.30 and then off he goes to bed by 7.30 !! So everything is time bound now, thats the reason I havent been updating my blog or visiting others for the past 2 weeks..

On his first day I guess I was more nervous than him,he was so excited and when I dropped him, to my surprise he went happily without any problem ,but after the initial excitement he realised that I m not there and then he became upset, so the following 2-3 days he was crying when I drop him and I too was a bit touched by his tears . He is now nearly settled there and has made few friends .

Coming to todays recipe. I came across this recipe in a supermarket's magazine. This will hardly take any time and its a great way give some greens for breakfast .

Ingredients
Egg - 1
whole meal bread - 1 slice
Butter/Spread- 1 tbs
Spinach - 100 gm
Salt and Pepper

Preparation
Fry the egg and season it with some salt and pepper.
In a pan add spread/butter and when it is melted add spinach and cook for 1-2 minutes or until spinach is wilted. Season it with salt and pepper if u like.
Toast the bread.
Place the spinach on toasted bread and pop the fried egg on the top ot it.

Egg puffs


Ingredients
Puff pastry sheet
Boiled eggs -3
Onion -2
Tomato - 1
Ginger chopped - 1tbs
Green chillies -2
Red chilly powder - 1/2 tbs
Turmeric powder - 1/4 tsp
Coriander powder - 1 tbs
Chicken masala powder - 1 tbs
Curry leaves -few
Salt
Preparation
In a saucepan take some oil and saute onions well. Add chopped ginger,green chillies,curry leaves and saute again.Add all the spice powders and saute again.Finally add tomatoes and salt cook until tomatoes are mashed.Cut the boiled egg into two halves and add this to the masala .Coat the eggs with masala and turn off the flame.
Cut the pastry sheets into squares and fill the masala with a egg half in each puffs and fold the sheets.Bake the puffs in a preheated oven at 220 degree centigrade for 20 minutes until it becomes golden brown.

Spanish omlette

Winter has started to give way to spring now . Daylights are coming back and temperatures are getting better. After 3- 4 months of horrible weather , roads are getting busier and so am I. My little one got really fed up by getting locked up within four walls for the last few months ,So we are going out everyday now for 3-4 hrs to his playgroup. After we come back in the evening he will be worn out and goes to sleep soon and I have loads of household work to do.By the time I finish my work he will awake, anyway I will find time somehow to catch up with up my fellow bloggers posts,but please excuse me if I am bit late.



Ingredients
4 eggs
Potatoes -2 medium
Onion - 1
Green pepper(capsicum) - 1/2
Cheese - less than 1/4 cup
Salt
Pepper

Preparation

Cook potatoes for 15 minutes and mash it gently with a spoon. Beat eggs in a bowl and add chopped onions,cooked potatoes,grated cheese ,capsicum,salt and pepper.Give it a good mix.In a pan add some oil and pour the mix and cook for 5-10 minutes.
