Mussels fry/ Kallummakayi porichathu

Being from Malabar in Kerala, Mussels is something that I grew up eating a lot,and like me most of the people in Malabar will go crazy for this shell fish.Eventhough we get Mussels here in U.K it doesnt taste good like the Mussels that we get back home and the size of it is too small compared to the one that we get back home.Like prawns,we get cooked and ready to use Mussels in supermarkets here,but it doesnt have much flavour ,so once in a while when we crave for this very badly we pick up live mussels from Fish mongers.
This weekend I picked up a whole bunch of it . Me and S had fun cleaning and cooking it.We prepared a whole lot of Arikadukka /Stuffed mussels which is a malabar speciality, and the rest I used for this fry.

Ingredients

Mussels - 50 nos
Redchilly powder - 1 1/2 tbs
Turmeric powder - 1/4 tsp
Salt

Preparation

1.Clean the mussel's shells and remove any dirt outside the shell.
2. In a vessel add a little water and add the mussels and cook it covered for 5 minutes or until shells are open.
3.Remove the shell and take the flesh.
4.Marinate it with masalas and shallow fry it.

Tandoori Chicken wings

Vahreh chef has inspried me to cook many of his recipes and none of the recipes that I tried from him has let me down.This recipe is from him and this always turns out good.You can find his recipe video here.

Ingredients

Chicken wings- 500gm
Kashmiri redchilly powder - 1 tbs
Turmeric powder - 1/4 tsp
Coriander powder - 1 tbs
Garam masala - 1 tsp
Pepper powder - 1/2 tsp
Cumin Powder- 3/4 tsp
Ginger garlic paste - 1 1/2 tsp
Yogurt - 2 tbs
Lime juice - 1 tbs
kasoori methi powder - 1 tsp
Salt
Oil - 2 tbs

Preparation

1.Marinate the chicken wings with all the ingredients and keep it atleast for 1-2 hrs or preferably overnight.
2.Place them in a preheated oven at 180 degree centrigrade for 25 - 30 minutes,turning the sides halfway through.

Kerala Egg roast

Spring is not that far and I am totally enjoying the day lights now, When I open my kitchen windows I can hear the birds chirping and singing which is so soothing and somehow it brings some nostalgic feelings of home !! Last week on our visit to Supermarket we saw a isle dedicated to spring cleaning items and we too picked up few things, so this weekend we did some spring cleaning to welcome spring and summer :)
Like I said last week, todays post is Kerala Egg roast which is one of my favourite side dish with appam,chapathy,Godambu dosha etc

Ingredients
Eggs - 3 no
Onion -3
Tomato - 2
Ginger -1 tbs (minced)
Green chillies - 2
Red chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder -1 tbs
Chicken Masala- 1 tbs
Cumin seeds - 1/4 tsp
Fennel seeds - 1/2 tsp
Curry leaves
Salt
Oil

Preparation
1. Boil eggs. Remove the shell and slice each egg into 2 halves.
2. In a saucepan add some oil and sputter fennel and cumin.
3. Add chopped onions and saute till soft and brown.
4. Add curry leaves, greenchillies, ginger and saute for 1-2 minutes.
5. Add chopped tomatoes and all the spice powders and cook until tomatoes are cooked.
6. Add the sliced eggs and mix carefully .

Wheat Dosa/ Godhambu dosha

Yet another chilly week passed by and this time we got a little bit of snow again and we all enjoyed it and the best part was that snow melted away quickly without becoming slush or ice !!
To continue with the last week happenings,I grew one more year old last week and I had a great day. S who never surprise me gave me a surprise gift that morning later that afternoon I had a great lunch with my friends in a Italian resaturant and in the evening S came home early and cooked a special dinner which was absolutely yummy !! The lunch I had with my friends was in an Italian restaurant and it was simply the best Italian food I had in a long time.
I took a pic of my lunch to show S and make him drool which you can find below :)

I think thats enough of blabbering for now,coming to today's recipe ,its wheat dosa which was a regular in my home and even in my hubby's home and you can fix this dosa without pre planning , soaking, grinding etc.This dosa goes well with Kerala egg roast which I realised that I have never uploaded here,so my next post will be Kerala Egg roast :)
Here goes the dosha recipe.
Ingredients
Wheat Flour (Atta) - 2 1/2 cup
Water - 3 1/4 - 3 1/2 cup
Salt
Oil for greasing the pan
Preparation
1,In a mixing bowl mix wheat flour, water and salt . Break all the lumps with fingers.
(the batter shouldnt be too thick or too thin)
2.Heat a nonstick pan on medium heat and grease it with little oil.Pour one ladle of batter and spread it to circle.Cook it uncovered.
3.Flip the side over and cook for few seconds.

Chicken Korigazi /Manglorean Chicken curry

Atlast the much awaited snow came, the weather forescast were so accurate and like they said it started exactly in the late evening,but since it was dark outside we couldnt enjoy it much.In the morning when we woke up it settled pretty much,but we went out to take some picture before it turns to ice or melt away,it looks like it wont last till tomorrow.Anyway we just needed one snow and for me its more than enough, I guess now I m ready for spring !!
I first tasted this curry from a Manglorean restaurant in Pune and then from my cousin sisters place and I totally loved it. After that I had it several times from a friends place who is also from Manglore.After tasting this for several times I decided to try this out myself and I asked for the recipe from my cousin sister( who is following her Manglorean mother in laws recipe) and from my friend too,both are pretty much the same, so I tried it with few minor changes and here is my recipe.

Ingredients

Chicken - 1 kilo
onion - 1/2
Coconut milk - 1/2 cup
Salt

To grind
Grated coconut - 1/2 of a coconut
Tamarind - a small piece
Turmeric - 1/4 tsp

For masala
Kashmiry Redchilly - 15 no
Coriander seeds - 3-4 tsp
Cumin seeds - 1 tsp
Peppercorns - 1tsp
Fenugreek - 1/8 tsp(10-12 no)
Curry leaves - few

Onion - 1/2
Garlic-2-3
Ginger - 1tbs (optional)

Preparation

1. In a pan add some oil and roast all the ingredients .Grind it with chopped onions, garlic and garlic.
2.Grind the grated coconut with tamarind and turmeric adding little water.
3.Pour the coconut mixture into a saucepan and add the masala mixture. Add 1/2 of chopped onions and chicken too.Cook covered.
4.When the chicken is cooked pour the coconut milk and when it start to boil turn off the flame.
5.In a pan add some oil and 3 tbs of finely chopped onions and fry till its brown. Add the fried onions to the gravy.

Fish Pie

This year the winter was so mild till last week, but this week it looks like the winter is back with full swing.Unlike last year, this year I m keeping myself very warmby wearing hat, scarf, gloves and even cozy snow boots so even when the temperature is minus I go out without feeling the chill,I guess wearing hats makes a big difference,I used to hate hats as it spoils my hair but once I started wearing it I dont think i will ever stop using it on chilly days. Last week on my walk to the local park I saw some small buds of wild flowers on the ground and the thought of spring's arrival itself made me feel so happy ,but now I cant believe how the weather can change :(


This whole week I was in mood to try out new things and Fish pie was one among them. Lil A loved it so much and even said " amma I love this, you are a good cook " :) Anyway that made my effort worthwhile !

Ingredients

Fish /Fish pie mix - 300 gm ( In my pie mix there was salmon,haddock and smoked haddock)

Potatoes - 3 large

Onion - 1 (chopped)

Garlic - 1 tbs (minced)

Carrot - 2 (grated)

Spinach - 100 gm (chopped)

Milk - 1/2 cup

Butter - 1 tbs

Worcetershire sauce - 1 tbs

Fish stock cube -1

Salt

Pepper

Cheese - grated

Preparation

1. Boil the poatoes and mash them add little milk and butter to mashed potato and make a smooth paste.Season it with salt and pepper.
2. In a saucepan add some oil,saute onions,add garlic,add grated carrot and stir for 2-3 minutes. 3. Add in fish stock cube,worcestershire sauce and little water.
4. Add fish , spinach and cook until fish is cooked.Season it with salt and pepper.
5. In an oven proof dish spread the fish mixture.Spread the mashed poatato on top of it.Sprinkle cheese on top .
6. Bake it in a preheated oven at 190 degree centigrade for 25-30 minutes.

Roasted Vegetables and Sausage ..Quick fix for lazy days !

The daily walk up and down the hill to lil A's nursery has made me lazy these days,always on look out for easy and quick meal ideas.. We generally dont buy sausage at home so this week I picked up a packet just for a change.First day I made a sausage pizza which turned out perfect, but its a shame that I coudnt take a pic to blog about it as I made it for our dinner.Next day I was thinking what to do with left over sausage.. Pasta was the first thing that came into my mind but then S came with the idea of eating just some roasted vegetables and sausage as a meal..There is nothing to blog about it but still I thought I will post it as I dont have any recipes in my drafts ..
Ingredients

Red potatoes - 2 large
Carrots - 1
Cauliflower florets- 1 cup
Salt
Pepper
Worcestershire sauce - 1 tbs
Chicken stock cube -1/2 of a cube
Cooked sausage -6 nos

Preparation

Chop all the vegetbales and add the seasonings and cook it in a preheated oven at 180 degree centigrade for 25 minutes.
Add the chopped sausage into it vegetables and mix.
Pop it back in the oven for another 5 minutes.
