Chilli fish with step by step pictures

Good time surely flies... before I blinked my eyes two weeks of holiday just flew past! sigh..No more late nights or alarm free mornings :( but I think to appreciate and enjoy the holiday we need to earn the break or it won’t be this fun. Anyway I am glad that I got back into the mood of blogging during this break and I actually took an effort to take pictures of things I cooked. I am not sure how long that is going to last though.

Coming to today’s post, chilli fish is one of my favourite dishes. I have been making this for a long time now, especially when I have friends over but like many other recipes it never found its way to blog. It’s such a hassle free recipe with no deep frying bit but still tastes awesome.Talking about the  step by step pictures eventhough I managed to click all the steps they are not really good ones as my helper (hubby) got so impatient and ditched me after taking 1-2 pictures so I  had to click most of it with one hand  :)

Ingredients
 For marinade and frying 
Boneless fish - 500 gm
Maida/ Plain flour - 6 tbs
Cornflour - 3 tbs
Ginger garlic paste - 2 tsp
Salt
Pepper - 1 tsp
Water - 1/4-1/2 cup
Egg -1
Oil for shallow frying 

For sauce
Onion - 3 medium (cubed )
Spring onion – 5 ( chop whites and green and keep them separate)
Capsicum/ pepper - 1
Green chillies - 2( cut diagonally )
Minced ginger – 2 tsp
Minced garlic – 2 tsp
Tomato sauce/ tomato ketchup – 5 tbs
Soya sauce - 4 tbs
Chilli garlic sauce - 2 tbs
Oyster sauce ( optional ) – 1 tbs
Salt 
Cornflour - 2 tbs
Water - 5 tbs

Method
  • In a bowl add Plain flour, cornflour, salt, pepper, ginger garlic paste, egg and water and make a batter ( thick enough to coat the the fish) 

  • Dip the fish in the batter and shallow fry them in a pan adding oil flipping the sides until they are golden brown for about 5 minutes on each side. Drain it on paper towel / kitchen tissue and keep it aside.

  • In the same pan add minced ginger, minced garlic and fry for 1-2 minutes.  
  •   Add cubed onions and chopped green chillies and sauté until onions are soft.  
  • Add spring onion whites and saute for a minute or so.
  • Add tomato sauce.  
  • Add soya sauce.
  • Add oyster sauce.   
  • Add chilly garlic sauce and cook for few minutes until oil starts to separate. 
  • Add chopped capsicum and stir for 1-2 minutes.  
  • Now add the fried fish and coat it in the sauces and cook it covered for 3- 5 minutes.   


  • Finally dissolve 2 tbs of corn flour in 5 tbs of water and pour this to the paneer and mix well. 
  • Cook for another 1-2 minute and  sprinkle the sprinkle the spring onion greens turn of the flame.

Chilli Tofu and Happy Chinese New Year


Happy Chinese New Year to all. I knew that Chinese New Year was this week but wasn’t aware that it was today until I checked my twitter. I felt like eating some Chinese today but since there is  no descent Chinese near our place and I had to satisfy with my comfort food, rice and dal instead!! Anyway since its Chinese New Year I am here with a recipe which was in my drafts and which  may fall into a Indo Chinese category perhaps?

I cannot really say Tofu is a delicious thing, it’s quite bland and the first few times I cooked with Tofu it was a disaster. I gave up on Tofu in spite of its health benefits until I came across my friend’s recipe. Nupur was confident that I will like it and gave me few tips to enhance the flavour too. It was so yummy like she said and Tofu started coming with me often in my shopping bag!  I started adding baby corn to it and  liked it even more as it gave a crunch to the recipe.  This is a healthy alternative when you crave for some Manjurian and it’s quite quick to make too.

Ingredients
Tofu (extra firm) – 300 gm
Baby corn – 200 gm ( cut )
Capsicum/pepper – 1
Corn flour – 1 ½ tbs for Tofu + 1 1/2 for baby corn
Plain flour/ Maida – 3 tbs
Ginger garlic paste-  1 tsp
Salt
Pepper
Water – 1/8-1/4 cup
Oil for shallow frying

For the sauce
Onion -2 medium
Ginger garlic paste – 1 tsp
Ginger minced – 1tsp
Garlic minced – 1 tsp
Green chillies- 2 (cut diagonally)
Tomato sauce/ tomato ketchup - 3 tbs
Soya sauce - 2 tbs
Chilly garlic sauce - 2  tbs
Cornflour - 1 tbs
Water - 3 tbs
 Sesame seeds – 1 ½ tbs (roasted)

Method

  • Take the extra firm tofu and gently squeeze the water and then remove the excess water with a kitchen tissue.cut them into cubes and dust them with 1 ½ tbs corn flour, salt and pepper.
  • In other add1 ½ tbs corn flour, 3 tbs plain flour, salt, pepper, ginger garlic paste. Add some water and make a batter ( not too thin) . Add the cut baby corns and coat in well in the batter.
  • In a pan add some oil and shallow fry both tofu and baby corns flipping the sides until they are golden brown. Drain it and transfer into a plate with kitchen tissue.
  • In the same pan add minced ginger, minced garlic and fry for 1-2 minutes.            
  • Add cubed onions and chopped green chillies and saute until onions are soft.     
  • Add tomato sauce, soya sauce, chilly garlic sauce and cook for few minutes until oil starts to separate.  
  • Add chopped capsicum and stir for 1-2 minutes.    
  • Now add the fried tofu cubes and baby corns and coat it in the sauces and cook it covered for 3- 5 minutes.
  • Finally dissolve 1 tbs of corn flour in 3 tbs of water and pour this to the paneer and mix well. Cook for another 1-2 minute and turn of the flame.      
  • Sprinkle with freshly roasted sesame seeds and serve hot.

Chilli paneer with step by step pictures


When I go to a restaurant there are some dishes which   never bothered  to order. Chilli paneer is one such thing . A few of my   friends here have been telling me that  there are  some Indian restaurants around where they  serve very good chilly paneer. But nope.. I still didn't want to taste it ! Wondering what changed now ? Since my parents are here on holiday ,I have been cooking a lot for them and the  other day when  I was cooking  my paneer butter masala  my Amma asked me whether I know how to make chilli paneer. I used to think that chilli paneer is popular only in my age group and is a relatively new thing, but she told me that years ago  when I was a school girl , our family went for a holiday somewhere and we ordered chilli paneer from a restaurant along with roti . She said she loved it so much and the taste of  that chilli  paneer is something she can never forget. ! Well after that  I had to rethink about tasting chilly paneer just to see what was the hype was about and thats how decided to go ahead make this especially for my Amma:) And the verdict ....yes I loved it too. Now when  I want to make a dry paneer dish I don't have to always rely on kadai paneer, infact I liked it better than kadai paneer :) So if you are paneer fan and like Indo chinese food, this is the kind of dish for u.



Ingredients

Method

Gobi Manjurian(Dry version)

Well if you know me I have never been so active in updating my blog this frequently..These days I am so in the mood of cooking something elaborate and the summer has made it easier to click whatever I cook for dinner as we have daylight till 9-9.30 p.m .Cant really call it summer though as this time it rained so badly here and we hardly got hot sunny days :( weather is such an unpredicatable thing in U.K ,will tell u about today...when I left home to pick my boy from nursery it was shining so brightly so I deliberately didnt take my umbrella.After I walked for 1-2 minutes the sky became dark and wind started blowing ..it looked as if its going to rain cats and dogs ! Luckily I reached the nursery before rain and then it started to pour...one of the mum kindly lended me her umbrella and since there was no sign of rain stopping we started walking back home.Even the umbrella couldnt help much as it was too windy ,somehow we reached home,and the moment we reached home the sun was out shining brightly ! Its always like this here ,we cant really trust the sun when we go out .

Ingredients
For frying
Cauliflower - 1 medium
Flour/Maida - 8 tbs
Cornflour - 4 tbs
Ginger garlic paste - 1 tbs
Salt
Pepper - 1/2 tsp
Oil

For sauce
Onion - 1
Minced ginger -garlic - 1 1/2 tbs
Tomato Sauce - 6 -8 tbs
Soya sauce - 2 tbs
Chilly garlic sauce - 4 tbs
Salt
Capsicum/Pepper- 1
Spring onions - 2-3

Method
1. Make a thick batter with flour,cornflour by adding ginger garlic paste ,salt and
pepper by adding little water.
2.Dip the clauliflower florets in the batter and deep fry them until golden brown.
3.Take few tbs of the same oil and saute the chopped onions till soft.
4.Add minced ginger and garlic and fry for 1-2 minutes.
5.Add all the sauces and cook till oil separates.
6.Add whites of spring onions,chopped capsicum and saute for another 1-2 minutes.
7.Finally add the deep fried cauliflower florets and mix them well until it is well coated in the sauce.
8.Garnish with some chopped spring onions.

Gobi manchurian



Ingredients

For Frying

Cauliflower -1 (small)
All pupose flour/Maida -5 tbs
Cornflour-3 tbs
Ginger- garlic paste - 1tbs
Pepper powder- 1/2 tbs
salt
Oil

For Sauce
Onion -1 large
Green pepper Capsicum)chopped - 1/2 cup
Spring onion
Minced Ginger and Garlic -1 tbsp
Green chillies -3
Tomato Sauce -4 tbs
Soya sauce -2 tbs
Redchilly Sauce - 2 tbs
Salt
Cornflour
Water
Preparation
Saute chopped onions in a pan until it becomes soft. Add minced ginger and garlic, chopped green chillies,capsicum and stir for few minutes. Add all the sauces and cook for 1-2 minutes.Dissolve 3-4 tbs of cornflour in 3/4 cup of water and add slowly to the pan.when it starts to thicken turn off the flame.

Make a batter of cornflour and all purpose with water adding pepper,salt and ginger - garlic paste.Dip the cauliflower florets in it and deep fry the florets in oil until cripy and light brown in colour.

Add Fried cauliflower to the sauce and mix well. Cook it covered for 2 minutes.Garnish with spring onions.
