A few weeks earlier when parents were invited to my lil ones nursery to read some stories , little did I know that the teachers were helping the kids to bake a delicious cake for us.
After the story and song session we were given a slice of lemon drizzle cake each and that was the first time I had tasted lemon flavour. I always used to think lemon wasn't my cup of coffee but surprisingly I loved it immensely , so I had to give it a go soon ! I think this has to be my current favourite flavour :)

INGREDIENTS
Recipe is from here which is originally Nigella Lawson's recipe
For Cake
Flour - 175 gm (1 1/3 cup )
Sugar - 175 gm (2/3 cup)
Butter - 125 gm ( 2/3 cup)
2 large eggs
zest of 1 lemon
pinch of salt
pinch of salt
Baking powder - 1 1/2 tsp
Milk - 1/4 cup
For syrup
Juice of 1 and a half lemons
Icing sugar -100gm
For glaze
Juice of 1/4 th of lemon (use 1/2 lemon if u like it too lemony,I used 1/2 )
100g icing sugar
Method
1.Cream butter and sugar until fluffy.

2.Add egg one and time and beat well after each addition.
3.Seive all the dry ingredients(flour,salt and baking powder) together and keep it aside.
4.Add lemon zest and beat.
5.Add half of the flour mixture and fold in.
6.Add the milk and fold in and finish off with the rest of flour and fold in.
7.Pour the batter into a greased and dusted loaf tin and bake it in a preheated oven at 180 C for about 35 minutes or until tooth inserted comes out clean.
For preparing syrup
1.In a small
saucepan add lemon juice , icing sugar and heat gently until the sugar dissolves.
2.As soon as cake is out of oven puncture all over with skewer and pour the syrup.

3.Allow the cake to cool completely before removing from tin .
For glaze
1.Mix lemon juice and icing sugar until smooth
and white, add more icing sugar if needed.
2.Drizzle or spread the glazing over the cake.
