During our 1 year stay in Pune (back in 2006), me and my hubby used to go out for dinner every Friday night and treat ourselves with a three course dinner. I really miss those beautiful Friday nights. We covered so many restaurants in the city and tried all types of cuisines available there. But among all restauranst my fvoutite one was a Kashmiri restaurant. It was from there, I tasted this wonderful dish for the first time. The taste was so incredible that every time I go there I ended up ordering the same thing. This was my first attempt to prepare this at home, I did little google search, went through so many recipes and finally made my version. I made this for dinner and luckily it came out well and I was planning to take a picture next day during daylight but nothing was left after the dinner :(
Here goes the recipe.

Ingredients
Lamb - 500 g ( diced)
Onion - 3
Tomato - 2 small or 1 large
Green chillies -2
Cinnamon stick -1
Bayleaf - 1
Cardamom pods -1
Cloves -2
Cumin - 1 tsp
Ginger garlic paste - 1 tbs
Kashmiri redchilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Coraiander powder - 2 tsp
Garam masala - 1 tsp
Yogurt -2 tbs
Salt
corianader leaves
Preparation
In a saucepan take some oil sputter some cumin seeds, add the whole spices (cinnamom, cloves, cardamom, bayleaf) and stir for few seconds.
Add the finely chopped onions to it and saute until onions becomes soft.
Add ginger garlic paste and stir again.
Add all powders and stir until the raw smell goes. Add the diced lamb and fry it for few minutes till the meat becomes little brown.
Add tomato puree and stir for few minutes.
Finally add the yogurt and cook it uncovered for 5 minutes.
When it is about to boil simmer it cook on a low heat , strirring occassionally until the meat is well cooked. It took 1 hour for me.. Garnish with coriander leaves.
Gravy looks really nice and love its colour too...will try this recipe with chicken surely

But this is neither rogan josh nor a kashmiri dish. Someone has misinformed you. But nowadays wherever I go ( except authentic Kashmiri eat outs) they serve some very tasty lamb dish as Kashmiri Rogan Josh.
If I cook an authentic kashmiri Rogan josh I will inform. ( I rarely cook Kashmiri dishes)
I will prefer to cook your dish vis a vis a Kashmiri dish as I dont have a great fancy for it.

ReplyDeleteFurther to my comment eariler, I just had some talk with an expert chef.
He is of the opinion that the punjabi variety and UP varieties of rogan josh contain onion and garlic but the origin of the dish is from Kashmir. which doesn't contain onion and garlic.

Infact when I searched for the recipe,sanjeev kapoor's recipe which I think is an aunthentic rogan josh didnot have any onions,tomato or garlic but some other chefs used it,since I thought rogan josh would be more delicious with onions and tomatoes I preferred onion,tomato,garlic version.
Please let me know if u cook an authentic version.Thanks again for your feedback.

I will give you the recipe, an authentic Kashmiri Rogan josh and a Rogan josh very popular in rest of India with onion and garlic.
Can you believe I am going to cook your Rogan josh tomorrow because it is very new to me. And I can guess the taste.
In all Kashmiri recipe the ingredients are fixed.It is always cooked in Mustard oil with Hing, curd, dried ginger powder, fennel powder and garam masala thats all.
In fact I cooked yesterday Turnip and Paneer in Kashmiri style (That was for a Jain Vege friend , no onion in any dish) but forgot to click ( actually the camera battery was down :-( )and the dish was ordered by my wife so didn't have time to charge ha ha

Vineetha, Ur Lamb Cooked in Yoghurt looks v inviting and delish. Love the creamy texture and the color. I understand when you cook something this good..there's no leftovers..so Click them quick b4they are gone..Its happened to me so many times and many a times I have aboslutely no pictures..just the recipe.
