Chicken Kichadi (kids meal)



Ingredients

Rice - 1/4 cup
Dals ( Toor dal,chana dal,moong dal,urad dal,red lentils) - 1/2 cup
Vegetables - (Carrots,beans,Spinach,Greenpeas, broccoli,tomato )- 1 cup
Chicken - 1/2 of a breast fillet
Redchiily powder - 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Cumin seeds - 1/4 tsp
Chicken stock/water - 1 1/2 cup
salt
Ghee/Butter - 1 tbs

Preparation

Soak rice and dals together atleast for 1 - 2 hrs.If you dont have time just soak them for half an water in hot water.
In a pressure cooker add ghee/butter and when it melts add cumin seeds when in sputters add all the vegetables and saute for 1-2 minutes.Add rice and dal and saute again.Finely chop chicken breast into small pieces and throw it in.Add all powders and chicken stock/water and stir well. Pressure cook it for 1 or 2 whistle.


This is an ideal meal for growing up kids,they will get enough protiens from dals and chicken,Vitamins and Iron from vegteables especially from Spinach and broccoli
