Sambar -1 (my favourite version)



Ingredients

Toor dal (yellow lentils) -1/4 cup
Onion -1
Potato -1
Carrot -1
Tomato -1
Drumstick -1
Okra (Ladies finger) -5 -7
Green chillies -2
Garlic -3 pods
Tamarind -a small piece
Turmeric powder
Salt
For sambar masala
Grated coconut - 3tbs
Toor dal - 1tbs
Raw rice -1 tbs
Urad dal -1tbs
Chana dal -1 tbs
Fenugreek seeds - 1 tsp
Cumin seeds -1/4 tsp
Curry leaves 2-3 sprigs
Asafoetida powder -less than 1/4 tsp
Whole Red chilly -4
Coriander powder - 2 1/2 tbs
Pepper corns -3
Preparation
Soak tamarind in little water and keep it aside.
In a pan take some oil and roast grated coconut till light brown in colour,add rest of the ingredients and roast again until it becomes dark in colour.Grind it to smooth paste by adding litle water.
Cook toor dal in a pressure cooker . Add all the chopped vegetables except drumsticks and okra (ladies finger) along with green chillies,turmeric powder and crushed garlic .Add salt.After 5-8 minutes add drumsticks and cook again for 2-3 minutes.Finally add okra and add the tamarind water .When Okra is almost cooked add the sambar masala and cook again for few minutes.
Add some coriander leaves.
Tempering
Take oil in a pan and sputter mustard seeds and add whole red chillies and curry leaves. Add this to sambar.

  10. OMG Vineetha..This is my favorite sambar too..Ur sambar looks inviting and irresistible. Its been so long that I have added drumsticks to my sambar.I love this sambar with idlis/dosas and even plain rice.
